New bar and bistro soft launches inside 'beautiful' Crewe town centre building

A new bar and bistro has soft launched inside a 'beautiful building' within Crewe town centre, following a new venture from market hall eatery owners.

The new business is operated by couple, Jessica King-Evans, and Dale King-Evans, who also run Crewe Market Hall's Mighty Burger Club.

"We have been interested in this beautiful building for a while. It is a noticeable landmark within Crewe town centre and everyone knows where it is," said Mrs King-Evans

Under its soft launch, Rustic Bar and Bistro will offer breakfasts, sub rolls, bar snacks and nibbles.

The new Crewe town centre eatery is using this as an opportunity to train staff and grow its customer base.

Mrs King-Evans told Nub News: "There will be a breakfast menu, sandwiches at lunch and bar snacks during the evenings - such as loaded fries and chicken wings.

"At this current time we will be open Wednesday to Saturday with Sundays open on busy town centre days - such as the Crewe Makers Market.

Under its soft launch, Rustic Bar and Bistro will offer breakfasts, sub rolls, bar snacks and nibbles (Nub News).

"After everyone becomes comfortable and we start to build our reputation and customers, we will develop the business further.

"We will then introduce longer hours with more menu dishes and continue to refurbish upstairs."

Currently, only the downstairs of Rustic Bar and Bistro will be open - with major renovation works taking place upstairs.

On Monday 3 July, Rustic Bar and Bistro submitted a premises license application to provide the supply of alcohol and recorded music until 11pm.

A Cheshire East Council decision for this is expected to be made at the beginning of August.

Mrs King-Evans said: "Once upstairs is ready to open, we will have all of our menus in place and be open for all of the hours planned.

"This place is not going to be a pub. It's will be place where you can get a drink with your food and enjoy a chilled atmosphere.

"The name of this place came from the way we wanted this place to look and feel. We kept coming back to the word 'Rustic.'

"We want all of our dishes to be fresh and simple, using local suppliers like at Mighty Burger Club."

Mr and Mrs King-Evans had been keen on the Victoria Street unit for a long time, expressing interest before their Crewe Market Hall venture.

Rustic Bar & Bistro is using its soft launch as an opportunity to train staff and grow its customer base (Nub News).

When it became available again, the Crewe couple snapped up the opportunity.

Mrs King-Evans added: "Before we opened Mighty Burger Club in Crewe Market Hall, we had looked at this place and really considered it.

"When it came up again recently, we thought it was good timing to give it a go and open up something a bit different.

"Me and Dale are going to run it. I will be in the front of house and he will work in the kitchen.

Dale and Jessica King-Evans had been keen on the former Big Apple Cafe Victoria Street unit for a long time (Ryan Parker).

"After we open up the upstairs, we will build the team and look at the structure from there and see what we need to put in place."

Until launching officially, Rustic will be open from 9:30am until 3:00pm (Wednesday and Thursday) and 9:30am to 9:00pm (Friday and Saturday).
