'Enhanced' cheese and wine business to open in Crewe town centre

An "enhanced" cheese and wine business is set to open in Crewe town centre this April, operated by the manager of a recently closed bistro and cheese shop.

Oliver Bailey, who managed The Cheese Corner, Crewe Market Hall, until 2 March, will reopen the "similar" Bailey's Wine Bar & Deli on Wednesday 2 April.

Archer Armstrong will perform live at 6pm that day on the Market Hall's stage to celebrate its opening.

The Cheese Corner was the official store front for Joseph Heler Cheese and the Cheshire Cheese Company before they pulled the plug on the Market Hall site.

Operated by Oliver for 14 months, the cheese and wine enthusiast couldn't let go of the business and quickly decided to come back as Bailey's Wine Bar & Deli.

Oliver told Nub News: "I fell in love with what we did at The Cheese Corner. Joseph Heler said the business didn't fit with its future plans and we were all made redundant.

"I didn't want to go back to working for someone, no jobs I was looking at excited me. The Cheese Corner made me love getting up and going to work.

"Joseph Heler had trusted me to manage the business myself. I came to the realisation it was possible to open my own business and went for it.

"I love the concept of Crewe Market Hall. Whether you want a pint and a burger or something more upmarket, there is something for everyone.

"I felt there would have been a huge gap in the market if The Cheese Corner had permanently closed and nothing similar came in its place.

"We had lots in the pipeline, including a partnerahip with Crewe Lyceum, which made this a naturally easy decision to open Bailey's Wine Bar & Deli.

To start with, Oliver will be running the business himself. He has already secured previous members of staff, Hazel and Lucas, to work over busy periods and events.

Oliver said: "At Bailey's Wine Bar & Deli, we will be hugely enhancing our offering compared to last time. We will be selling Joseph Heler and Cheshire Cheese company stock as they are exceptional.

"But, we also learnt across the past 12 months there were a great deal of products our customers wanted that we didn't sell.

"Whether that be Appleby's Coloured Cheese or Kidderton Ash Goats Cheese, it will be really refreshing to bring these products to customers locally.

"We will be sticking with the grazing boards and cheese toasties. We will still be selling cheese and wine but all our wines have changed.

Bailey's Wine Bar & Deli will be open Wednesday to Sunday for the current time. Opening on Monday and Tuesday will be considered in the future (Nub News).

"Except for all core range of Joseph Heeler Cheeses the deli will be filled with a completely new range and a new range of deli meats.

"A lot of the menu will be similar to The Cheese Corner but we have either enhanced the offerings we already had and in places added more to the menu.

"We have spent a lot of time designing the store to move it away from the previous business."

Bailey's Wine Bar & Deli will be open Wednesday to Sunday for the current time.
