A Mexican stall has reopened following months of closure from a town centre venue - now offering all fresh produce to customers.
Mexicano De Jimmy took over the closed down Casa Mexica stall inside Crewe Market Hall at the beginning of May.
Visitors had been left upset asking why Mexican food had permanently disappeared from the venue - but their questions have now been answered.
"I bought this four weeks ago and it is quite similar to what Casa Mexica was but I am making everything fresh unlike before," says business Owner Mr James Scott.
The 33-year-old has years of experience in the food industry - starting at the age of 14. He has worked for lots of bars and grills In this time.
The owner previously worked at Jordy's Pizza within Crewe Market Hall and decided to quit earlier this year.
Market Hall manager Gary Johnson convinced Mr Scott to stay within the venue.
Mr Scott told Nub News: "When I was about to leave the market, the manager convinced me to stay, saying: 'The Mexican needs you, it's not doing very well.' I decided to move here and I am very glad that I did.
"The owners of Casa Mexica didn't work themselves. They just employed who they could find.
"The two employees that they did find, started off absolutely amazingly, but they got no time off and left.
"In the end, the owners ended up employing two 15-year-old girls and a 16-year-old lad.
"They basically threw them in the deep end and let them just get on with it. The taking went down massively, which is when I came in."
Mr Scott previously worked for famous Chinese Chef Victor Yu, of Yu Alderley Edge, Cheshire.
He believes that he has been taught the right way across his cooking career - his business sells an item nowhere else sells fresh in the entire town.
The business owner added: "Casa Mexica used to buy in frozen guacamole and make really watery salsa. Now I pride myself in making everything fresh.
"I have been told that my guacamole is the only place in Crewe that you can actually get it fresh - I am the only one that does this, which is amazing.
"Getting this guacamole fresh is very expensive. I pride myself on the quality of my food and I've always worked in a kitchen.
"I just know from what I have learnt that fresh food is best. I believe that I got taught the right way and want to show that with my stall in Crewe Market Hall, it's all going really well so far.
Mr Scott left Jordy's Pizza on bad terms, but believes It's all worked out for him and his family in the end.
The father-of-one believes that Crewe Market Hall is an asset to Crewe and will only get better with time.
"Crewe Market Hall is really good. People see Crewe as a dying town and it is struggling in the town centre, but what I have heard from customers and the local council is that they are trying to make it better and busier.
"I know a lot of businesses have been shutting down in recent years, but I think the change is going to take time.
"Realistically, the only place in Crewe to come now is this market. There aren't many other places for local people to go.
"You have a few shops but apart from that - Crewe Market Hall is the place to go in Crewe."
Mr Scott was labelled 'an asset to Crewe Market Hall' by Gary Johnson for his interaction with customers and support to the market as a whole.
The former Jordy's Pizza worker has even got involved with the security at the venue - dealing with issues before the bouncers have come over.
He said: "You get everybody in here. The younger crowd, the older crowd and lots of families. The quiz nights every Thursday and the live music every Friday and Saturday, different markets on Sundays - this is the place to be.
"This is the reason by I bought this business. I think that Crewe is up and coming, hopefully they start to finish some of the projects that are going on.
"There are hoardings everywhere, but I think Crewe will get there. In five or 10 years, Crewe should be much better."
"Crewe Market Hall is in a good location. You have the nice Municipal Square greenery area at the front and the Market is going to be opened up at the back by the theatre.
"With an expansion to the leisure area at the back on the former car park, there will be even more on offer."
The business owner is delighted with his first four weeks in charge of his own food stall.
It is his first solo venture, previously working alongside his cousin in a 75 per cent 25 per cent split.
Mr Scott added: "I am happy with taking this business on. We are already taking in a lot more than towards the end of Casa Mexica.
"I believe the ingredients will speak for themselves and I enjoy building a strong rapport with all my customers.
"I feel like I have already build a good relationship with families and this needs to continue."
Mexicano De Jimmy is open from 10am Wednesday to Sunday.
The eatery closes at 6pm on Wednesdays, 9pm on Thursdays, 11pm on Fridays and Saturdays and at 7pm on Sundays.
